ABSTRACT

As condições higiênico-sanitárias precárias que caracterizam os açougues de Moçambique contribuem para a contaminação de carnes, constituindo um atentado à saúde dos consumidores. Este estudo visou realizar uma análise microbiológica da carne bovina comercializada nos açougues da cidade de Nampula, Moçambique. Foram analisadas, sob padrões laboratoriais ISO, a carne bovina fresca e as zaragatoas de sete açougues licenciados. A análise revelou que 100% das amostras de todos os açougues foram contaminadas por bactérias aeróbias mesófilas, porém, no limite aceitável de contaminação. Cinco açougues apresentaram valores superiores a 1,5 × 106 UFC/g de contaminação. Para Staphylococcus aureus, todas as amostras apresentaram valores superiores a 100 UFC/g; para Escherichia coli, quatro amostras apresentaram valores acima dos limites aceitáveis; e 71% das amostras foram contaminadas por Salmonella spp. Quanto aos utensílios e equipamentos, houve contaminação em 14% das amostras. Assim, recomenda-se a implementação de boas práticas de manipulação de carne nos açougues da cidade de Nampula, de modo a promover a obtenção de carne de qualidade pelos consumidores.


The precarious hygienic-sanitary conditions that characterize the butcheries in Mozambique, contribute to the contamination of meat, which can jeopardize the health of consumers. This study aimed to perform a microbiological analysis of the bovine meat sold in the butcheries of Nampula city, Mozambique. We analyzed, under ISO laboratory standards, bovine meat and swabs from seven licensed butcheries. The analysis revealed that 100% of the samples were contaminated by mesophilic aerobic bacteria; however, the contamination remained within the acceptable range. Five butcheries presented values over 1.5 × 106 CFU/g of contamination. For Staphylococcus aureus, all samples presented values higher than 100 CFU/g; for Escherichia coli, four samples were showed values over the acceptable range; and 71% of the samples were contaminated by Salmonella spp. Regarding utensils and equipment, 14% of the samples were contaminated. Thus, we recommend implementing good meat handling practices in butcheries of Nampula city to promote the obtention of quality meat by consumers.


Las precarias condiciones higiénicas y sanitarias que caracterizan a las carnicerías en Mozambique contribuyen a la promoción de la contaminación de la carne, constituyendo un ataque a la salud de los consumidores. Este estudio tuvo el objetivo de realizar análisis microbiológico de carne vacuna vendida en carnicerías de la ciudad de Nampula, Mozambique. Se analizó, bajo patrones de laboratorio ISO, carne vacuna fresca e hisopos de siete carnicerías. El análisis reveló que el 100% de las muestras estaban contaminadas por bacterias aerobias mesófilas en todas las carnicerías, pero dentro del límite aceptable de contaminación. Cinco carnicerías presentaron valores superiores a 1,5 × 106 UFC/g de contaminación. Para Staphylococcus aureus, todas las muestras presentaron valores superiores a 100 UFC/g; para Escherichia coli, cuatro muestras presentaron valores por encima de los límites aceptables; mientras que el 71% de las muestras estaban contaminadas por Salmonella spp. En las muestras de utensilios y equipos hubo contaminación en un 14%. Por lo que se recomienda implementar buenas prácticas de manejo de carne en las carnicerías de la ciudad de Nampula, con el fin de promover la adquisición de carne de calidad para los consumidores.

@#Abstract: Objective To investigate a poisoning incident caused by eating eight treasure congee, and establish liquid chromatography (LC)-mass spectrometry (MS)/MS screening method of 28 alkaloids to provide references for disposal of similar poisoning incidents. Methods LC-MS/MS was used for screening 28 alkaloids in the urine, eight treasure congee and food raw material, and the detected alkaloids were quantified. Samples were extracted with 0.4% formic acid aqueous solution and separated by a Acquity UPLC BEH C18 column (1.7 μm, 100 × 2.1 mm). Acetonitrile-0.2% formic acid aqueous solution was used as the mobile phase and gradient elution was adopted. The ionization mode was electrospray positive ionization mode, and the detection method was multi-reaction monitoring (MRM). Analytes were quantified with the external standard method. Results In the concentration range of 0-100 ng/mL, the linear correlation coefficient r were greater than 0.999 for 28 alkaloids. The recovery of 28 alkaloids in urine sample ranged from 63.0% to 105.0%, and the relative standard deviations (RSDs) were between 5.8% and 8.6%. The recovery of 28 alkaloids in eight treasure congee sample ranged from 72.0% to 109.0%, and the RSDs were between 6.3% and 9.7%. The recovery of 28 alkaloids in semen sesami nigrum sample ranged from 60.0% to 95.0%, and the RSDs were between 4.8% and 8.2%. Hyoscyamine (2 380.0 ng/mL), scopliamine (3.6 ng/mL) and rac-anisodamine (4.7 ng/mL) were detected in the patient's urine. Hyoscyamine (63.3 μg/g), scopliamine (5.7 μg/g) and rac-anisodamine (2.1 μg/g) were detected in eight treasure congee. Hyoscyamine (901.0 μg/g), scopliamine (80.0 μg/g) and rac-anisodamine (30.1 μg/g) were detected in the seed of Datura stramonium L. The ratio of scopliamine and hyoscyamine in the seed of D. stramonium was 1∶11, which complies with the characteristics of D. stramonium L. In urine sample, the proportion of scopliamine and rac-anisodamine was 0.15% and 0.20%, and hyoscyamine accounted for 99.65%. Conclusion Seed morphology, the content range and proportion of three alkaloids are all in accord with the characteristics of D. stramonium. Combined with the clinical symptoms of atropine poisoning, it can be deduced that this incident is a family food poisoning caused by accidental consumption of seed of D. stramonium L. The method can provide technical support for the clinical diagnosis and treatment of alkaloid poisoning patients, and also provide a basis for emergency detection and disposal of alkaloid poisoning events.

@#Abstract: Objective In order to provide reference for emergency treatment of a sudden food poisoning incident, pathogen detection and drug resistance analysis were carried out. Methods Diarrheal stool and surplus food samples were detected by GB 4789 and the isolates were identified by VITEK2 and matrix assisted laser desorption ionization-time of flight mass spectrometry (MALDI-TOF MS), at the same time, the bacterial drug sensitivity test was carried out by using the method of microbroth dilution, and the isolates from different sources were molecularly classified by pulsed field gel electrophoresis (PFGE), and the correlation between the strains was analyzed by BioNumerics software. Results Totaly 13 leftovers and 3 diarrhea patients were isolated and identified, The total number of colonies and coliforms in 7 leftovers samples all exceeded the standard, and Citrobacter freundii was detected in 5 leftovers and 2 stools. The results of drug sensitivity test showed that seven strains of Citrobacter freundii were sensitive to ciprofloxacin, tetracycline, chloramphenicol, gentamicin, amikacin, cefotaxime and meropenem, but completely resistant to ampicillin, and there was no multiple drug resistance. The results of pulsed field gel electrophoresis (PFGE) showed that 7 strains of Citrobacter freundii had the same PFGE bands and 100% homology, showing the same clone. Conclusions This food poisoning incident was caused by Citrobacter freundii. The pathogen of food poisoning can be quickly and accurately determined by MALDI-TOF MS, which is beneficial to the early diagnosis and treatment of infectious diseases. It is suggested to strengthen the corresponding management, improve food safety awareness and prevent similar incidents.

ABSTRACT

ObjectiveTo ascertain the causes of a food poisoning incident and provide references for the prevention of similar incidents in the future. MethodsCase investigation was conducted through field epidemiological investigation methods, and suspicious meals and foods were searched by the analytical epidemiological method. A food hygiene investigation was conducted in the establishment involved and samples of suspicious food, processing steps, and cases were collected for laboratory testing. ResultsA total of 91 individuals meeting the case definition were identified, resulting in an attack rate of 14.97% (91/608). The main clinical manifestations included abdominal pain (97.80%), diarrhea (84.62%), nausea (62.64%), vomiting (72.53%), fever (12.09%), and increased white blood cells (90.11%). The peak incidence occurred from 16:00 to 18:00 on June 15. The epidemic curve showed a point-source exposure pattern, with an incubation period of 1 h minimum and 10 h maximum, and an average of 5 h. Analytical epidemiological studies indicated that lunch on June 15 was the suspicious meal (χ2=38.78, P<0.001), and those who consumed cold-dressed tofu with preserved eggs had a significantly higher risk of falling ill compared to non-consumers (χ2=105.21, P<0.001). Laboratory testing results revealed Vibrio parahaemolyticus detected in 1 employee’s anal swab and 18 cases’ anal swabs. Staphylococcus aureus was detected in 1 food ingredient and 1 case’s anal swab. The remaining samples tested negative. ConclusionThe cause of this food poisoning incident is Vibrio parahaemolyticus. The cause is the canteen’s supply of cold-dressed tofu with preserved eggs beyond its permissible business scope, potentially leading to cross-contamination during food processing. Regulatory authorities should strengthen routine law enforcement inspections and monitoring. Food service establishments should strengthen food safety awareness, standardize operational procedures in strict accordance with relevant national laws and regulations and food safety standards, and strive to reduce the occurrence of foodborne disease incidents at their source.

In this research, some plant seeds powder was evaluated to find their potential effect to rule diseases of food poisoning. Antimicrobial effect of five plant seeds was examined contra Bacillus cereus, Staphylococcus aureus, Escherichia coli, Klebsiella. pneumonia and Candida albicans by using well diffusion method. Antimicrobial activity studies revealed high potential activity of plant seeds powder of Nigella sativa L., cucurbita pepo, Sesamum radiatum, Trigonella foenum-graecum, Linum usitatissimum with variable efficiency contra tested microbial strains with concentration of 100 mg/ml, except Sesamum radiatum scored no effect. The T. foenum and N. sativa seed powder showed the largest inhibition zone (24-20 mm) contra K. pneumonia, followed by S. aureus (20-18 mm) and C. albicans (15mm) respectively. The five plant seeds powder exhibited bacteriostatic and bactericidal effects with MIC's 20 and MBC 40 mg/ml against K. pneumonia, and MIC's 40 and MBC 60 mg/ml against S. aureus. The results of this study indicated that plants seeds powder have promising antimicrobial activities and their potential applications in food process. It could be utilized as a natural medicinal alternative instead of chemical substance.


Nesta pesquisa, o pó de sementes de plantas foi avaliado para encontrar seu efeito potencial no controle de doenças de intoxicação alimentar. O efeito antimicrobiano de cinco sementes de plantas foi examinado contra Bacillus cereus, Staphylococcus aureus, Escherichia coli, Klebsiella pneumonia e Candida albicans usando o método de difusão bem. Estudos de atividade antimicrobiana revelaram alto potencial de atividade de sementes de plantas em pó de Nigella sativa L., Cucurbita pepo, Sesamum radiatum, Trigonella foenum-graecum, Linum usitatissimum com eficiência variável contra cepas microbianas testadas com concentração de 100 mg / ml, exceto Sesamum radiatum com pontuação não efeito. Abstract Staphylococcus aureus is one of the main pathogens associated with foodborne outbreaks in Brazil and food handlers can carry toxigenic and resistant S. aureus strains. The aims of this study were to verify the frequency of virulence genes, to identify the agr groups and to determine the antimicrobial resistance profile of S. aureus strains isolated from food handlers of pilot kitchens located in São Paulo, Brazil. A total of 74 strains of the Staphylococcus genus were detected and 50% were identified as of the species S. aureus. The enterotoxin genes detection, tst and luk-PV detection, agr typing, mecA detection, ccr complex detection and SCCmec typing were performed using PCR. The antimicrobial resistance testing was performed by the disk diffusion method. The enterotoxin genes were identified in 36 S. aureus, including sea (83.8%). The tst gene was detected in 18.92% of the strains and the luk-PV was detected in only one isolate. Agr typing classified 58.3% of the strains as type I. Seven (18.92%) strains were classified as MRSA and the ccr2 complex was detected in six of these isolates. The SCCmec typing characterized strains as type II, III, IV and V. Moreover, there were also a greater number of resistant strains to penicillin (83.78%) and clarithromycin (67.57%). In conclusion, the study revealed a significant prevalence of S. aureus, and the presence of different virulence genes and a worrying resistance profile in S. aureus strains isolated from food handlers in this country.

@#Abstract: Objective To analyze the epidemiological characteristics of public health emergencies in Xishuangbanna Dai Autonomous Prefecture from 2012 to 2021, and to provide reference for formulating relevant prevention and control measures. Methods The data of public health emergencies reported in Xishuangbanna from 2012 to 2021 were collected and analyzed through the China Disease Prevention and Control Information System. Results A total of 78 public health emergencies (including "Unrated" events) were reported in Xishuangbanna from 2012 to 2021. The highest 21 cases and the lowest 3 cases were reported every year. A total of 1 0374 cases were reported in 78 public health emergencies, involving a population of 1 703 049, with a morbidity of 609.14/100 000, 24 deaths, mortality of 1.41/100 000 and fatality rate of 231.35/100 000. The event level was mainly "general (level Ⅳ)" with 52 incidents, accounting for 66.67%, and 17 incidents of "major (level Ⅲ)", accounting for 21.79%. 51 cases were mainly infectious diseases, accounting for 65.39%. The peak periods for incidents were May-July and November-February of the next year; there were 39 incidents in schools, accounting for 50%, followed by 20 incidents in families, accounting for 25.64%. The top three reported cases were food poisoning (32.05%), chicken pox 17 (21.79%) and dengue fever 10 (12.82%). Among the 24 deaths in public health emergencies, 22 were caused by food poisoning. Wild bacteria poisoning and alcohol poisoning were the main causes of food poisoning, accounting for 45.83% and 37.5% of the total deaths, respectively. Conclusion Infectious diseases, especially respiratory diseases and food poisoning are the focus of the prevention and control of public health emergencies in Xishuangbanna Dai Autonomous Prefecture, of which Schools and families should be pay close attention. Plague, a Class A infectious disease, caused by the bacterium Yersinia pestis has occurred in two inter-animal outbreaks in 10 years and spread to the population, which should be of great concern.

ABSTRACT

Objective To Investigate the cause of a food poisoning incident in a city in Dehong Prefecture, determine the scope of the incident, and to formulate effective prevention and control measures. Methods Field epidemiology and case-control study methods were used to formulate case definition; carry out case search; find suspicious food combined with clinical manifestations, dining history and other information; and collect samples from the suspicious food, cases and environment for laboratory testing. Results A total of 160 cases were found and the incidence rate was 26.02% (160/615). The main clinical manifestations were diarrhea, leukocytosis, vomiting, nausea and abdominal pain. The average incubation period was 10.89±5.09 h, with 2 h as the shortest and 28 h as the longest. The epidemiological curve suggested the point source exposure mode. The results of case-control study showed that eating roast pork with green shoots was an independent risk factor (OR=13.09, 95%CI: 3.26‒52.54).16 samples were tested by the local CDC laboratory. Proteus mirabilis was detected in two the anal swabs of two patients He and Chen. Both proteus pani and proteus mirabilis were detected in anal swab of patient Zhou and Proteus pani was detected in roast meat. There was no detection of pathogenic bacteria in other samples. Conclusion Based on the field epidemiological investigation and laboratory test results, we conclude that the food poisoning incident is caused by suspected proteus bacteria. We suggest that the market supervision department should strengthen the supervision of local food hygiene; clarify the sampling rights, responsibilities and technical procedures when medical institutions treat patients with foodborne diseases; ensure finding the causes in time; and take effective prevention and control measures to avoid similar food poisoning events.

ABSTRACT

Salmonellosis is the world's most common foodborne illness. In Brazil, foods contaminated by salmonella lead the statistics. Therefore, the aim of this study is, through biotechnological knowledge, to compile alternative and innovative techniques for the detection of salmonella in foods, such as fish-farming derivatives, immunological and biosensorial techniques. This is a descriptive exploratory data survey of a qualitative nature, aiming at data analysis. Research and data collection were carried out in bibliographic databases: Academic Google, Scielo, CAPES journals and institutional repositories using specific descriptors - in Portuguese and English, with words and terms separated by the Boolean operators 'AND' and 'OR'. Some innovative and alternative methods are available to identify the presence of salmonella in food. Immunological and biosensory techniques, despite being less frequent in the scientific literature than molecular methods, are techniques that present high specificity and sensitivity. These techniques have been the most developed alternative methods in fish in recent years. And, they can employ both molecular and immunological techniques in biorecognition, which is characterized as an advantage of not having a requirement for pre-enrichment of the sample. According to the literature found, the techniques covered in this study are quick to respond, which speeds up decision-making by researchers and technicians, which makes the techniques very promising for industrial application.(AU)


A salmonelose é uma enfermidade de maior ocorrência no mundo veiculada por alimentos. No Brasil, alimentos contaminados por salmonelas lideram as estatísticas. Por isso, o objetivo desse estudo é através dos conhecimentos biotecnológicos compilar técnicas alternativas e inovadoras para a detecção de salmonelas em alimentos, como os derivados da piscicultura, as técnicas imunológicas e biossensoriais. Trata-se de um estudo de levantamento de dados descritivo exploratório de de caráter qualitativo, visando à análise dos dados. As pesquisas e coletas de dados foram realizadas nas bases bibliográficas: Google Acadêmico, Scielo, periódicos da CAPES e repositórios institucionais utilizando os descritores específicos - nos idiomas português e inglês, com palavras e termos separados pelos operadores booleanos 'AND' e 'OR'. São disponibilizados alguns métodos inovadores e alternativos para identificação da presença de salmonelas em alimentos. As técnicas imunológicas e biossensoriais, apesar de serem menos frequentes na literatura científica do que os métodos moleculares são técnicas que apresentaram elevada especificidade e sensibilidade. Essas técnicas têm sido os métodos alternativos mais desenvolvidos em peixes nos últimos anos. E, podem empregar tanto técnicas moleculares como imunológicas no biorreconhecimento, o que se caracteriza como vantagem de não haver requerimento de pré-enriquecimento da amostra. Conforme a literatura encontrada, as técnicas abordadas por esse estudo apresentam rapidez de resposta o que agiliza as tomadas de decisões dos pesquisadores e técnicos, o que torna as técnicas bastante promissora para aplicação industrial.(AU)


La salmonelosis es la enfermedad transmitida por alimentos más común del mundo. En Brasil, los alimentos contaminados por salmonelas lideran las estadísticas. Por tanto, el objetivo de ese estudio fue a través de conocimientos biotecnológicos recopilar técnicas alternativas e innovadoras para la detección de salmonelas en los alimentos, como los derivados de la piscicultura, las técnicas inmunológicas y biosensoriales. Se trata de una encuesta de datos exploratorio descriptivo de carácter cualitativo, cuyo objetivo es el análisis de datos. Las investigaciones y recopilaciones de datos se realizaron en bases de datos bibliográficas: Google Académico, Scielo, revistas CAPES y repositorios institucionales utilizando descriptores específicos, en portugués e inglés, con palabras y términos separados por los operadores booleanos 'AND' y 'OR'. Se encuentran disponibles algunos métodos innovadores y alternativos para identificar la presencia de salmonela en los alimentos. Las técnicas inmunológicas y biosensoriales, a pesar de ser menos frecuentes en la literatura científica que los métodos moleculares, son técnicas de alta especificidad y sensibilidad. Esas técnicas han sido los métodos alternativos más desarrollados en peces en los últimos años. Y pueden emplear técnicas tanto moleculares como inmunológicas en el biorreconocimiento, que se caracteriza por la ventaja de no tener un requisito de preenriquecimiento de la muestra. Según la literatura encontrada, las técnicas abordadas en este estudio son de rápida respuesta, lo que agiliza la toma de decisiones por parte de investigadores y técnicos, lo que hace que las técnicas sean muy prometedoras para la aplicación industrial.(AU)

RESUMEN Introducción: La aflatoxina M1 (AFM1) es un metabolito tóxico derivado de la aflatoxina B. Su ingestión en lactantes se ha relacionado con retraso en el crecimiento, aumento de susceptibilidad a enfermedades infecciosas, reducción de la eficiencia en la inmunización y cirrosis. En Paraguay se recomienda lactancia exclusiva hasta los 6 meses, sin embargo se comercializan diferentes marcas de fórmulas infantiles dirigidas a lactantes menores de 6 meses. Objetivo: Detectar y cuantificar la presencia de AFM1 en fórmulas para lactantes comercializadas en el Área Metropolitana. Materiales y Métodos: Se adquirieron fórmulas fluidas (n=18) y en polvo (n=91) para lactantes de 0 a 12 meses de farmacias y supermercados del Área Metropolitana de Asunción y fueron analizados mediante el ensayo de inmunoafinidad ligado a enzimas (ELISA). Resultados: 9,75% (0 a 6 meses) y 2% (6 a 12 meses) de las fórmulas lácteas en polvo y 100% de las fórmulas fluidas resultaron positivas para AFM1. La mediana de contenido de AFM1 en formulas en polvo fue de 1820 ng/kg y 510 ng/kg en las marcas A y B. En las fórmulas líquidas fue de 31,8 ng/kg y 33,6 ng/kg para las dos marcas analizadas respectivamente, p=0,0001. Conclusiones: Se detectó AFM1 en todas las fórmulas líquidas analizadas, y en el 2 y 9,7% de las fórmulas en polvo de las marcas Ay B respectivamente Los niveles de AFM1 fueron mayores en las fórmulas en polvo.


ABSTRACT Introduction: Aflatoxin M1 (AFM1) is a toxic metabolite derived from aflatoxin B. Its ingestion in infants has been related to growth retardation, increased susceptibility to infectious diseases, reduced immunization efficiency, and cirrhosis. In Paraguay, exclusive breastfeeding is recommended up to 6 months of age, however, different brands of infant formulas targeted at this age range are marketed. Objective: To detect and quantify the presence of AFM1 in infant formulas marketed in the Metropolitan Area. Materials and Methods: Fluid (n = 18) and powder (n = 91) formulas for infants aged 0 to 12 months were purchased from pharmacies and supermarkets in the Metropolitan Area of Asunción and were analyzed using the enzyme-linked immunoaffinity assay (ELISA). Results: 9.75% (0 to 6 months) and 2% (6 to 12 months) of the powdered milk formulas and 100% of the fluid formulas were positive for AFM1. The median content of AFM1 in powder formulas was 1820 ng/kg and 510 ng/kg in brands A and B, while in liquid formulas it was 31.8 ng/kg and 33.6 ng/kg for the two brands analyzed respectively (p = 0.0001). Conclusions: AFM1 was detected in all the liquid formulas analyzed, and in 2 and 9.7% of the powder formulas of brands A and B, respectively. The levels of AFM1 were higher in the powder formulas.

Introducción: Staphylococcus ocasiona con frecuencia intoxicaciones alimentarias; en Cuba es una de las principales causas de brotes. Objetivo: analizar el perfil del riesgo de brotes alimentarios por Staphylococcus en Cuba. Métodos: Se realizó un estudio observacional analítico sobre los factores higiénicos y epidemiológicos asociados al riesgo de la intoxicación alimentaria por Staphylococcus en Cuba, en el Instituto Nacional de Higiene Epidemiología y Microbiología, durante el periodo de enero a noviembre de 2018. La información se obtuvo mediante revisión bibliográfica sistémica, análisis de datos del Laboratorio de Referencia Nacional en Microbiología Sanitaria y informes de brotes de la Dirección Nacional de Salud Ambiental. Se estimó el riesgo microbiológico mediante el programa semicuantitativo Ross-Sumner. Resultados: Se identificó como principal peligro Stahylococcus aureus, productores de enterotoxina A y la determinación de aislamientos resistentes a los antimicrobianos, como Stahylococcus aureus meticilina resistentes. Los alimentos más implicados fueron los productos de repostería y la inocuidad se afectó en mayor frecuencia por la contaminación cruzada en el 31,4 por ciento brotes y la inadecuada conservación en 46,1 por ciento. La predicción de personas que enferman por año en la población de interés fue de 6 260. Conclusiones: El riesgo de la ocurrencia de brotes por Staphylococcus se estimó como alto; la vigilancia se recomienda en alimentos que requieren manipulación directa y no se aplica tratamiento térmico antes del consumo, con gestiones de riesgo dirigidas a productores y consumidores(AU)


Introduction: Staphylococcus is a frequent cause of food poisoning. In Cuba it is one of the main causes of outbreaks. Objective: Analyze the risk profile of staphylococcal food poisoning outbreaks in Cuba. Methods: An observational analytical study was conducted about hygienic and epidemiological factors associated to the risk for staphylococcal food poisoning in Cuba. The study was carried out at the National Institute of Hygiene, Epidemiology and Microbiology from January to November 2018. The information was obtained from a systematic bibliographic review, analysis of data from the Medical Microbiology National Reference Laboratory, and outbreak reports from the National Environmental Health Division. Microbiological risk was estimated with Ross-Sumner semi-quantitative software. Results: The main hazard identified was Staphylococcus aureus, enterotoxin A producers and determination of antimicrobial resistant isolates like methicillin-resistant Staphylococcus aureus. The food items most commonly involved were sweets, and safety was most frequently affected by cross-contamination in 31.4 percent of the outbreaks and inadequate preservation in 46.1 percent. Prediction of members of the population of interest becoming ill every year was 6 260. Conclusions: Risk for the occurrence of staphylococcal food poisoning outbreaks was considered to be high; surveillance is recommended of food items requiring direct manipulation and appropriate thermal treatment is not applied before consumption, with risk management actions aimed at manufacturers and consumers(AU)

@#Introduction: Eating out has always been associated with increasing cases of food poisoning. These problems can be minimized through mobile applications and technology development. A mobile application called MyWarung© was developed to provide an alternative, improved tool for improving food poisoning knowledge and preventive behaviour. Methods: This cross-sectional study aims to assess the feasibility and acceptance of the MyWarung© application for consumers in Terengganu. The 50 consumers were selected based on the inclusion and exclusion criteria using convenience non-probability sampling. The data were collected through a questionnaire that included three components: socio-demographic, feasible (6 components) and acceptable (7 components). The scoring above 80.0% indicates an acceptable, while lower than 80.0% show unacceptable for both feasibility and acceptability sections. SPSS 22.0 has analyzed the data. Results: The results showed excellent feasibility with a median score of 27.5 (IQR 6.0) out of 30.0, and acceptance with 32.0 (IQR 7.0) out of 35.0. Majority of the respondents agreed that the app is easy to use (94.0%), easy to understand (88.0%), attractive (84.0%), catchy (88.0%), provides more information (96.0%), efficient (96.0%), knowledge improvement (96.0%), beneficial (100.0%), useful application (88.0%), and recommend to the other people (84.0%). The overall result showed that most respondents agreed that MyWarung© application was feasible and acceptable with 90.0% and 86.0% feasibility and acceptability rate. Conclusion: The MyWarung© application among consumers can be highly feasible and acceptable in preventing food poisoning during dining out.

ABSTRACT

Objective To analyze the epidemiological characteristics of food poisoning in Shenzhen from 2009 to 2018, and to provide a scientific basis for formulating control strategies of food poisoning. Methods The data of food poisoning events in Shenzhen from 2009 to 2018 was analyzed with descriptive epidemiological methods. Results There were 182 reported food poisoning events, resulting in 1786 cases and 3 death. The incidence of food poisoning events had a seasonal peak during May to September, and a total of 119 reported food poisoning events (65.39%, 119/182) occurred in that period of time with 1156 cases (64.73%, 1156/1786). There were 77 food poisoning events (42.31%) occurring in collective canteens with 927 cases (51.91%), making them the most frequent locations for food poisoning. The main pathogenic factors were bacteria, poisonous plants and chemicals. Incidents of bacterial food poisoning were mainly caused by Vibro parahemolyticus (51.73%, 60/116), Salmonella (26.73%, 30/116), and Staphylococcus aureus enterotoxin (11.21%, 13/116), etc. Hyacinth bean toxin and mushroom were responsible for 33.33% of the incidents caused by poisonous plants. Incidents of chemical food poisoning were mainly caused by nitrite (8.33%). Conclusion The prevention and control of food poisoning in Shenzhen should be focused on reducing bacterial food poisoning such as Salmonella and Vibrio parahaemolyticus, and supervision of food safety of catering units and collective canteens should be strengthened. Additionally, health education on prevention and control of food poisoning should be targeted at the high-risk population to reduce the risk of food poisoning.

Objective To analyze the epidemiological characteristics of food poisoning deaths in Wenshan Prefecture of Yunnan Province from 2010 to 2019, so as to provide the basis for formulating the strategies and measures for prevention and control of food poisoning deaths in Wenshan Prefecture. Methods The data of food poisoning deaths in Wenshan Prefecture from 2010 to 2019 were collected and analyzed by Excel software. Results From 2010 to 2019, 65 food poisoning deaths were reported, accounting for 7.5% of the food poisoning incidents in the same period.The fatality rate of food poisoning deaths was 36.7%, and the mortality rate of food poisoning events in the same period was 2.1%.The high incidence of food poisoning deaths occurred in summer and autumn, with the highest in June and July.Wild mushroom poisoning was the main cause of death in food poisoning, and the incidence was mainly in rural families. Conclusion Wild mushroom poisoning should be the focus of controlling food poisoning deaths in Wenshan Prefecture.It is necessary to strengthen public education, improve people′s ability to identify edible wild mushrooms, strengthen the building of capacity of medical institutions in towns and villages, and establish a long-term mechanism for food safety management.

ABSTRACT

Objective To find out the causes of food poisoning in a school banquet and identify the pathogenic bacteria, so as to provide evidence for the treatment of food poisoning. Methods A field epidemiological survey was conducted to search for cases, find suspicious poisoning meals and food, and collect cases and food samples for laboratory testing, to determine pathogenic pathogens and virulence genes. The pulsed field gel electrophoresis (PFGE) was applied to identify the homology of the pathogens. Results A total of 92 poisoning cases were found, and the incidence rate was 46.94%. The main clinical manifestations were diarrhea (93.48%), abdominal pain (86.96%), nausea (39.13%), vomiting (34.78%) and fever (17.39%). The median of onset latency was 17 hours. Vibrio parahaemolyticus was detected in samples from 3 patients (2 stools and 1 anal swab). The virulence gene trh was positive and the similarity coefficient of PFGE banding was 97.4%. Pathogenic bacteria were not detected in 10 food samples. The results of the case-control study showed that six types of food were suspicious (OR values were 15.75, 10.14, 8.44, 5.93, 5.56 and 4.71 respectively, P1), including couple lung slices and California bass with extremely high risk of exposure (OR values>10). Conclusion  The food poisoning resulted from this enrollment banquet was caused by trh-positive Vibrio parahaemolyticus and no suspicious food was identified (the possibility of contamination by couples' lung slices and California sea bass was high). It is suggested that the supervision and management of catering units and food safety publicity and education should be strengthened to reduce the occurrence of food-borne diseases from the source.

Background: An outbreak investigation for food poisoning in a school of rural Maharashtra was carried out. This school had central kitchen for children staying at hostel. During monsoon season occurrence of acute gastroenteritis diseases is common and hence it important to investigate each and every suspected outbreak presenting with similar symptoms to that of acute gastroenteritis.Methods: It was a retrospective and prospective study design. All 140 children who ate food from central kitchen were interviewed and followed up. Median incubation period was obtained from the 12 children who fitted into case definition which was given by integrated diseases control program of Maharashtra. Environmental and food sampling along with laboratory investigations was done for diagnosis.Results: Total 12 children had symptoms of food poisoning. The median incubation period was around 8 hours. Gastrointestinal symptoms were the commonest reported by all the 12 children. It was found out that all the symptomatic children had eaten laddu brought from outside and stored in unhygienic conditions.Conclusions: Eating of laddu which were stored in unhygienic conditions had resulted into growth of Clostridia streptofaecalis in it causing food poisoning to children.

ABSTRACT In the last decades, harmful algal blooms (HAB) and toxic events such as ciguatera seem to have increased in frequency and intensity, negatively impacting human health, economy, and marine ecosystems. In Colombia, these events have caused a series of consequences ranging from the death of fish and birds to toxic effects on humans. Although some toxin-producing dinoflagellate species are common in the Caribbean, their dynamics are poorly understood, making the adoption of any regulations difficult. To determine the composition and abundance of dinoflagellates associated with seagrasses we collected 18 samples on Isla de Barú, during 2015. We found ten diatom genera and three dinoflagellate genera, Prorocentrum, Ostreopsis, and Gambierdiscus, that include toxigenic species related to ciguatera and diarrheic shellfish poisoning. Prorocentrum lima was the most abundant dinoflagellate, with average cell densities of 52±48 cells/g substrate wet weight. The temperature hypothesis gains strength as one of the main modulators of dinoflagellate abundance observed in the Caribbean, especially regarding Prorocentrum species and some diatoms such as Mastogloia corsicana and Actinocyclus normanii. This assumption is supported by the Since high positive correlation between El Niño Southern Oscillation and the sea surface temperature in the Caribbean during 2015.


RESUMEN En las últimas décadas, las floraciones de algas nocivas (FAN) y los eventos tóxicos, como la ciguatera, parecen haber aumentado en frecuencia e intensidad, afectando negativamente la salud humana, la economía y los ecosistemas marinos. En Colombia, estos eventos han causado una serie de consecuencias que van desde la muerte de peces y aves hasta efectos tóxicos en los seres humanos. Aunque algunas especies de dinoflagelados que producen toxinas son comunes en el Caribe, su dinámica es poco conocida, lo que dificulta la adopción de cualquier regulación. Para determinar la composición y abundancia de dinoflagelados asociados con los pastos marinos, recolectamos 18 muestras en Isla de Barú durante 2015. Encontramos diez géneros de diatomeas y tres géneros de dinoflagelados, Prorocentrum, Ostreopsis y Gambierdiscus, que incluyen especies toxigénicas relacionadas con la ciguatera y la intoxicación diarreica por mariscos. Prorocentrum lima fue el dinoflagelado más abundante, con densidades celulares promedio de 52 ± 48 células / g de peso húmedo de sustrato. La hipótesis de la temperatura gana fuerza como uno de los principales moduladores de la abundancia de dinoflagelados observados en el Caribe, especialmente con respecto a las especies de Prorocentrum y algunas diatomeas como Mastogloia corsicana y Actinocyclus normanii. Este supuesto está respaldado por la alta correlación positiva entre la Oscilación Sur de El Niño y la temperatura de la superficie del mar en el Caribe durante 2015.

Objective To understand the molecular epidemiological characteristics of staphylococcus aureus(S.aureus),which was isolated from food poisoning in Xian between 2013 and 2017. Methods A total of 26 S.aureusisolates from 8 outbreaks were analyzed by using pulsed field gel electrophoresis(PFGE), multilocus sequence typing(MLST) and spa typing. polymerase chain reaction(PCR) analysis was used to analyze the staphylococcal enterotoxin genes sea to sei. Results 26 strains of S.aureus were divided into 7 types of A-G by PFGE; They were divided into 3 types by MSLT, ST6 accounted for 65.38% which was the main type; They were Divided into 4 types by spa typing, t701 accounted for 65.38 % which is the dominant type. The sea accounted for 76.92% (20/26) in the enterotoxin gene testing; sed-seg accounted for 23.08% (6/26); other enterotoxin genes were not detected. Conclusion The predominant type of S.aureus isolated from food poisoning in Xi'an was ST6-t701-seaprofile from 2013 to 2017. The first detection of the new enterotoxin gene seg, PFGE, MLST and spa typing were combined to fully understand the molecular epidemic characteristics of strains.
